Vanilla Coconut Panna Cotta with Pomegranate Jelly..

A Vanilla Coconut Panna Cotta to toast a wonderful year gone by and to welcome a New Year  filled with happiness, good health and blessings..!!


 

Alright, I know..! Its New Years Eve, and we are all waiting for that countdown to begin. Its a great feeling. 2011 is over and 2012 is starting. Seems like yesterday when I was awake, excited about welcoming the new Millennium, and suddenly 11 years are over. And I am older, a little bit wiser , with a husband and two kids. and it all seems like yesterday. WOW,time does fly.

This is the perfect time to ponder. Take 5 minutes for yourself. Pour out a large glass of wine, prop up your feet on the table, swirl the wine around a bit, take a sip and let it wash over your mouth and slowly gulp it down. Now tilt back your head, close your eyes and think back on the year that has gone by. Think about the not so happy moments first and when you feel “Why me”, think of the happy moments. You will see that the happiness is much more memorable and intense than the sad moments. The person that you were on 1 Jan 2011 and the person you are on 1 Jan 2012 are poles apart. And you would not have been more mature, better and stronger had it not been for the instances in the year gone by.  Raise your glass to a toast for all those incidents, thoughts and actions for the last year, close your eyes and focus on the mysteries of tomorrow, the year to come. Think positively and open your eyes, eager and prepared for a new tomorrow.!!

VANILLA – COCONUT PANNA  COTTA

  • 500 ml  coconut milk
  • 1 cup heavy cream
  • 1 cup single / coffee cream, 18%
  • 1 cup caster sugar
  • 1 vanilla bean, split and seeded
  • 14 g (2 packages) unflavoured powdered gelatine

In a medium saucepan, bring coconut milk, both types of cream, sugar, vanilla bean and seeds just to the boil, over medium heat, stirring until sugar is dissolved. Remove from heat, cover and allow vanilla to infuse for about 20 minutes.
Fill a small bowl with 90 ml very cold water; sprinkle gelatine over water and allow gelatine to bloom, 5 to 10 minutes.
Pass coconut mixture through a fine mesh sieve into a medium-sized bowl discard solids.
Add bloomed gelatine to coconut mixture; whisk until gelatine is completely dissolved.
Care needs to be taken when adding the gelatin to the cream mixture. Make sure that it is mixed well. The common problem that many face when making the panna cotta is that the gelatin and the cream layer separates when it cools. This happens when the mixture is of different temperatures and you cool it in the fridge. Instead, cool the mixture lightly over a bowl of ice water whisking it continuously. Then pour it into glasses and leave it to set.
Again pass mixture through a fine mesh sieve into a pourable container.

 

POMEGRANATE JELLY 

  • 7 g (1 package) unflavoured powdered gelatin
  • 2 cups Pom pomegranate juice
  • 2 teaspoons caster sugar

In medium-sized bowl stir together gelatine and ¼ cup boiling water until gelatine is dissolved.
Add juice and sugar to dissolved gelatine; stir until well combined and sugar is dissolved.
Pass pomegranate mixture through a fine mesh sieve into pourable container. Discard the solids and keep aside.
Try to use the pom juice and not the normal pomegranate juice to make the jelly as it will not have the color and taste of pom juice.

 

Assembling Vanilla-Coconut Panna Cotta with Pomegranate Jelly

Pour the Vanilla coconut panna cotta  till the glass is 3/4 full. Keep this in the refrigerator for 2 hours till it sets. If you are going in for the tilted look, you will need an egg carton. Place the glass in the egg carton in such a manner that it is tilted sideways. Slowly pour in the panna cotta mixture till it is three quarters full. Leave to set in the refrigerator.

After 2 hours, remove the panna cotta from the fridge and out of the egg carton. Place it on the table and pour the pomegranate jelly mixture till the top of the glass. Return the glasses to the fridge so that it sets completely.  This dessert can be made upto 2 days in advance. It makes for a delicious dessert.

    Although I can’t make this one because it has gelatin, I love the presentation here – the idea of tilting the glass to give it these layers is great! 🙂

      You can try it with just vanilla flavor or any strong seasonal fruit toppings.. The best part of this post was that I learnt the tilting technique.. So i had to share it with you guys..!
