Kozhukatta – Rice dumplings filled with sweetened coconut..!!

Kozhukatta – a traditional recipe kerala recipe of sweetened coconut stuffed rice dumplings, steamed and served, with each dumpling being a mystery in itself.

Kozhukatta has been and will ever be an immensely popular nadan palaharam (traditional snack). It is one snack of which I have seen numerous variations but each taste equally good, if not better. The filling , as most dishes from South India, is coconut. The coconut is sweetened with either sugar or molasses, sometimes pieces of nuts are added to it and sometimes there is no filling at all. In the latter version a sweetener is not used- the coconut, rice flour and salt is mixed together, made into small balls and steamed. This kozhukatta can be taken with gravies or with a sprinkling of sugar on the side. This is the savory version.

KOZHUKATTA – Coconut stuffed rice dumplings

Ingredients

  • Rice Flour – 1 cup
  • Salt – 3/4 tsp
  • Boiling Water – almost 2 cups
  • Grated Coconut – 1 1/2 cup
  • Jaggery / Molasses – 1/2 cup
  • Cardamom powder – 1/2 tsp

Method

  • Combine the grated coconut, molasses/ jaggery/ sugar and the cardamom powder. Mix well so that the coconut is well coated with the sweetener and cardamom. You should be able to get all this flavors in every bite.  Keep aside
  • In a large mixing bowl, combine the rice flour, salt and boiling water. Add the water a little at a time so that you have just enough to make a smooth dough and it is not watery. use a spoon to mix the dough as the water is hot and you do not want to burn those great looking hands..!
  • Turn the flour onto a clean surface and knead well, till smooth and soft.
  • Take a small ball of dough. Keep it on one palm and press down with the other creating a flat disc.

  • Place 2 tsp of the filling in the center of each disc.
  • Bring the edges together and seal it to make a smooth round ball shaped dumpling.
  • Place the dumplings in a steamer and steam for 15 minutes to 20 minutes.
  • Remove from the steamer, arrange in a plate and serve warm.
  • Enjoy the taste.
