Kulfi – The frozen Ice-cream from India …!!

” My advice to you is not to inquire why or whither, but just enjoy the ice cream while it’s on your plate ~ T. Wilde ” . Those are my sentiments about this creamy decadent milk based Indian dessert – Kulfi..!

Today I have prepared a wonderful dessert , one I always bought from the vendor across the college road, the one that we would relish in different flavors, and the variations of which could mostly found in the little ice lollies stands at home. Oh O.. I know that look… I know, there has been an overdose of coconut based, South Indian dishes on this site.But not today..!! I am quite looking forward to a change too. So I have made today,a no coconut included … to the beaming faces of my kids… kulfi, the frozen dessert from India.. or is it Pakistan… or Burma.. well at least for now, from my kitchen to yours..!!

KULFI

  • Condensed Milk – 200 gm
  • Evaporated Milk – 200 gm
  • Fresh Cream – 300 gm
  • Pistachio – 1/2 cup
  • Cardamom powder – 1/2tsp to 3/4 tsp
  • Bread – 1 slice
  • Saffron – a large pinch
  • Rose essence – 2 drops or Rose water – 1 Tbsp
  • Warm Water – 1 Tbsp

METHOD

  • Soak the bread slice in the evaporated milk for 15 minutes till soggy.
  • Combine the rose essence, water and saffron and keep aside for 10 minutes. It will become a light orange, the color of saffron. If you have rose water please use that instead of the essence and water.
  • Powder the pistachios and keep aside.
  • In a blender combine the condensed milk, evaporated milk, cream, bread, pistachio, cardamom powder and the saffron mix. Whiz till combined, about 2 minutes max.
  • Pour this mixture into a container and freeze till set.
  • When you want to unmould the ice cream, lower the ice cream pan into a container of hot water. Count till 15 and remove. you will notice that the sides have melted slightly. Keep a plate on top and invert the kulfi.
  • If made in individual containers, serve garnished with pistachios and little saffron.
  • If the kulfi is set in a bigger container, then slice it like you would with cassata and serve garnished with pistachios and saffron.

Kids will love this ice cream. It is creamy and very tasty. You can substitute any flavors instead of saffron, pistachios and rose. According to the information guru Wikipedia “It comes in various flavours, including cream, raspberry, rose, mango, cardamom, saffron, the more traditional flavours, as well as newer variations like apple, orange, strawberry, peanut, and avocado. Unlike Western ice creams, kulfi is not whipped, resulting in a solid, dense frozen dessert similar to traditional custard based ice-cream. Due to its density, kulfi takes a longer time to melt than Western ice-cream”
