My sister Ammu had sent me a recipe for an apple cinnamon syrup a loooong time back. However I could not make it and hence not taste it till now because of a houseful of sick kids. Now that we have returned to normalcy, this breakfast made an appearance on the table and boy, was it a hit or what..!

pancake is a thin, flat, round cake prepared from a batter, and cooked on a hot griddle or frying pan.My relation with pancakes have been very odd , sometimes watery sometimes burnt. But this recipe which I got from the King Arthur Flour is just amazing and precise. It changed the relation status quite a bit. And topped with this delicious apple cinnamon syrup, its a tingling of tastebuds in every bite.. yum yum..!!

Fluffy Pancakes

Source King Arthur Flour

  • All Purpose Flour – 1 1/2 cups
  • Salt – 3/4 tsp
  • Baking powder – 2 tsp
  • Eggs – 2 large
  • Milk – 1 1/4 cup
  • Sugar – 2 Tbsp
  • Butter – 3 Tbsp


  • Beat the eggs and the sugar together till they are light and foamy.
  • Stir in the melted butter and whisk well.
  • Add the dry ingredients to the wet ingredients and mix well to combine.
  • Heat a griddle or a frying pan. Let the pan get really hot and then turn the flame to medium. Pour in a small ladle (about 3 Tbsp) of batter and let it spread lightly.
  • Observe the bubbles or holes appearing on the top. Flip sides when this happens. Cook the other side and remove from flame. Use a piece of kitchen paper or cloth dipped in some butter to lightly lubricate the pan before you pour the next batch. It need not be soaking in butter, just very light.
  • Serve immediately with some apple cinnamon syrup (recipe follows).
  • If you want to prepare ahead, store the pancakes with some parchment paper in between each pancake, so that it does not stick together and keep it in a hot pot.

  • Apple juice / Apple cider – 2 cups
  • Sugar – 3/4 cup or depending on the sweetness of the juice
  • Cornflour – 2 Tbsp
  • Cinnamon powder – 2 tsp
  • lemon juice – 1 1/2 Tbsp
  • Butter – 1/4 cup


  • Combine the apple juice or cider (any one of your choice) , sugar , cornflour and cinnamon in a saucepan and bring to a boil.
  • Reduce the flame to low and cook till the sauce thicken s slightly like a custard. eep stirring all the while so that it does not get burnt. Stir often as you do not want a lumpy sauce.
  • Remove from flame and stir in the butter. Mix well.
  • Serve over pancakes or waffles.
  • You can store the remaining sauce in the fridge. It will set when it cools and when kept out for a long time. But you can heat it up again to loosen it before you use it the next time.
